Lasciateli raffreddare in forno.

And so to point number 2! I left you with sunny pictures , but with some 'darker clouds approaching ... and now here they arrived in the following photos .......

with its necessary consequences and the obligation of "spring cleaning"!
But the snow did not stop the "seekers of crumbs"

nor skiers, especially the smaller ones, with their desire for color.
So when the sun has begun to peeking through the clouds, creating once again an incredible spell of transparencies, layers and sudden appearance ....

..opened before our eyes this fairytale landscape, but this time drew more King Oberon and his elves, both downstream...

and in the surrounding mountains
To end this second episode, here's a recipe room: it is the
CHEESE SEASONED WITH LEAVES OF TOBACCO AND WALNUTS AND PEARS JAM AND GINGER AND CLEMENTINE JAM

We had already shown in the post on the Tropea onion jam this summer some of the delicious "cheese" of my favorite dairy, dairy Social Bormio. This time I found a new delight, a cheese wrapped in aromatic leaves of tobacco can not imagine the delight, seasoned but round in taste and, like all cheeses, excellent when served with these two jams, which, to my taste , complete it well. The first recipe I found on Cookaround (author Brigidaa) and the repropose you exactly how I found , with my only variation related to cane sugar instead of white sugar.
pears and walnuts with cinnamon jam

Ingredients:
2.2 pounds of pears
3.5 oz walnuts
2 1/8 cups of white sugar or 250g of fructose (or 2 cups sugar cane)
2 tsp of cinnamon
Wash pears, peel and cut into slices by removing the core. Blanch walnuts in boiling water for a few minutes and remove the peel. In a saucepan, place the pears and coarsely chopped walnuts and cook over low heat until the fruit pulp has softened. Then add sugar (or fructose or cane sugar) and stir to melt. Continue cooking over low heat until the preparation reaches a boil, then raise the heat and, stirring constantly, just to thicken. Blend and put back on the heat, add the cinnamon and skim preparation. Potted and flip.
This rather
CLEMENTINE AND GINGER JAM

I found it here, Brii author, and I only changed a little by reducing the quantity of sugar (my version is in brackets) and adds a hint of ginger, to give a sweet note, but sharp, that's fine . The site we'll mention the other hand, the author also considers the delicious possibility of transforming it into a mustard ... you see it. The recipe is actually not very fast implementation, but it's really great!
Ingredients
2.2 pounds of tangerines / clementines
3 1/2 cups of sugar (2 3/4 cups sugar cane)
(3 tsp of grated ginger)
4-5 drops of extract of mustard for 2.2 pounds compound
Holes mandarins and place them in cold water for 48h, changing the water 3-4 times a day. Cut them into thin slices and remove any seeds, mixed with sugar and let macerate for 24 hours. Put in a pot of steel, and cook for about 1 hour and a half, until it reaches the desired consistency (remember the famous plate test?).
Now you can do two things: either potted in sterilized jars and have a delicious jam, either chop with the immersion blender to get a jam, and pot them
or:
let cool completely, which is important because the steam drops of mustard is very strong, add the extract, re-pot and sterilize. So you get a good mostrda of which I am, I confess, very tasty. As amount of drops of mustard oil, given 4-5 drops per pound of compound. Helpful suggestion always picks on the web site to sterilize jars, place them upside down in a pan with high edge, with water pot in the middle and bake for 30 minutes at 130 °. Let cool in the oven.

And now bon appetit
