Insalata di pollo in turbante di speck

E' autunno, è ufficiale, i colori del cielo e delle cose sono più netti, l'aria al mattino e alla sera più frizzantina...lo dice perfino il calendario...
Ciononostante pare che la temperatura, durante il giorno, non voglia saperne di abbassarsi a queste banali indicazioni generali del periodo e continua, implacabile, a pensarsi estiva, con punte belle elevate nelle ore centrali della giornata, che  fanno rimpiangere di non potersi dedicare solo alla tintarella e ai bagni di mare...
Anche il giardino sta vivendo un momento di incertezza: ci sono piccoli fiori primaverili in procinto di sbocciare,

Piatti storici : Pojarski di salmone

Ecco il secondo piatto della nostra rubrica "piatti storici" . Questa volta, per una sorta di par condicio virtuale ci trasferiamo dalla New York  di metà '800 alla Grande Madre Russa dello stesso periodo, con lo Zar Nicola II e invece di star internazionali e frequentatori raffinati, si tratta della corte dell'ultimo "Piccolo Padre" di tutte le Russie. Sembra che questo Pojarski fosse il cuoco favorito dello Zar e che abbia creato questo piatto appositamente per lui, che ne era ghiotto. Queste polpette si preparano anche con vitello o petto di tacchino, di pollo e d’anatra. Sono conosciute anche come costolette rifatte , in quanto l’ingrediente di base viene tritato e ricomposto in forma di costoletta o di polpetta piatta, impanato e fritto: quelle di vitello, in particolare, venivano riposizionate sulle ossa originali del taglio di carne, per poterle presentare con eleganza. La ricetta che vi presento viene da Sale e pepe del Gennaio 2007, e l'ho trovata eccellente. Ve la giro con piacere.
Pojarski di salmone

Per 4
400 gr di filetto di salmone
200 gr di fagiolini
1 carota
200 gr di patatine novelle
100 gr di mollica di pane fresco
1 dl di panna fresca
Farina per infarinare
50 gr di burro
Sale, pepe bianco

Eliminate la pelle e le lische dal filetto di salmone e frullatelo nel mixer dopo averlo tagliato a pezzi.
Con una presa di sale e una macinata di pepe; ammorbidite la mollica di pane con la panna e frullatela con il salmone.

Lessate le verdure in acqua bollente salata , scolatele al dente e saltatele in una padella con 10 gr di burro per circa 5 minuti.
Preparate con il composto di salmone 8 grosse polpette piatte leggermente ovali; infarinatele e friggetele a fiamma bassa in una padella antiaderente con il burro rimasto spumeggiante

Dopo circa 2 minuti giratele con l’aiuto di una spatola e proseguite la cottura per un altro minuto abbondante. Servite subito il salmone con le verdure calde al burro

Suggerimenti personali:
- indubbiamente con la panna il gusto delle polpette è decisamente più ricco, ma si può sostituire con il latte, volendo.
- ovviamente se, come me, avete la fortuna di trovare tutte le verdurine fresche è decisamente meglio.
- ho aggiunto un pizzico qua e la, sia sulla verdura sia sulle polpette di aneto, che con il salmone va decisamente a nozze!
- e, per ultimo, il burro è decisamente poco, ma se proprio volete potete sostituirlo con un filo di olio d'oliva, delicato... il gusto non è proprio lo stesso , ma si lasciano mangiare ugualmente!

Serves 4
400 grams of salmon fillet
200 grams of green beans (also frozen)
1 carrot
200 grams of little new potatoes (also frozen)
100 g fresh breadcrumbs
1 dl heavy cream
Flour for dusting
50 g butter
Salt, white pepper

Take off skin and bones from the salmon fillet : cut it a put it in a blender and mince it.
Soak the bread with the cream, squeeze it and mince it with the salmon with a pinch of salt and freshly ground pepper,
Boil the vegetables in salted boiling water, drain when al dente and toss in a pan with 10 g of butter for about 5 minutes
Prepared with the mixture of salmon 8 large fishballs slightly flat oval, flour and fry them over low heat in a pan with remaining butter bubbling
After about 2 minutes turn it with a spatula and continue cooking for other 3 minutes. Serve the Pojasky immediately with hot buttered vegetables
Personal Tips:
- The taste of the fishballs, using cream for soaking the bread, is much more rich, but you can substitute it with milk , lighter
- Of course if, like me, you are lucky enough to find all the fresh vegetables is much better
- I added a pinch of dill here and there, on both the vegetables and fishballs, because with salmon, it’s perfect!
- And, finally, the butter is very little, but if you want you can replace it with a drizzle of olive oil, the taste is not quite the same, but they’re good, anyway!
