Il segreto di questa tarte con la sua pasta di farina integrale, formaggio e senape è quello di cuocere i cipollotti fino a quando non sono quasi caramellati così di formare un piacevole strato spesso e dorato sulla base...
Ingredienti
Per la pasta:
50 g di farina autolievitante (o 1/2 cucchiaino scarso di lievito aggiunto alla farina 00)
50 g di farina integrale
pizzico di sale
½ cucchiaino di senape in polvere
50 g di burro
40 g di formaggio Cheddar, grattugiato (o del Gruyère)
Per il ripieno:
700 g cipollotti tritati abbastanza piccoli
50 g di burro
2 uova grandi, sbattute
110 ml di panna, yogurt naturale o latte (½ e ½)
1 cucchiaio di formaggio grattugiato tipo Cheddar o Gruyére,
sale e pepe nero, macinato al momento
Metodo
Preriscaldare il forno a 180°
Prima di tutto preparate la pasta frolla setacciando le farine, il sale e senape in polvere in una terrina, poi mescolate il burro, fino a quando il composto diventa friabile. Poi aggiungete il formaggio grattugiato e aggiungete acqua fredda sufficiente a formare una pasta che lasci la ciotola pulita. Avvolgete la pasta in un sacchetto di plastica e lasciate riposare in frigo per mezz'ora.
Nel frattempo, preparate il ripieno. Sciogliete il burro in una casseruola dal fondo spesso, quindi aggiungete i cipollotti tritati, mescolate per farli ben rosolare nel burro, e cuoceteli (senza coperchio) a fuoco moderato per circa mezz'ora fino a quando non si sono ridotti e hanno preso un bel colore dorato scuro. Mescolateli di tanto in tanto per evitare che si attacchino sul fondo della padella e, se alla fine del tempo non hanno raggiunto un bel colore oro scuro, abbassate la fiamma e cuocere per altri 10 minuti.
Stendete ora la pasta per foderare uno stampo da crostata, bucherellate la base con una forchetta, mettetela nel forno pre-riscaldato e cuocete al centro del forno per 15 minuti. Togliete dal forno e spennellate l'interno della scatola di pasta con un po' di uovo sbattuto, recuperato da quello che userete per il ripieno, e rimettete in forno per altri 5 minuti. Poi stendete le cipolle su tutta la base della crostata, sbattete le uova con la panna , pepe e sale e versate il composto sopra lo strato di cipolle.
Infine spargete su tutto il formaggio grattugiato, riportate la crostata in forno e cuocete per 30 minuti finché il ripieno è gonfio e dorato

2 oz butter
2 large eggs, beaten
4 fl oz double cream, natural yoghurt or milk
1 level tablespoon Grated Cheddar cheese
salt and freshly milled black pepper
Pre-heat the oven, and a baking sheet, to gas mark 4, 350 ° F

Also you will need an 8 inch fluted tart tin, greased.
Method
First make the pastry by sifting the flours, salt and mustard powder into a mixing bowl, then rubbing in the fat until the mixture Becomes crumbly. After that remove from the oven and brush the inside of the pastry case with a little beaten egg (from the filling), and return to the oven for another 5 minutes. Then spread the onions all over the base of the tart, whisk the beaten eggs together with the cream and some seasoning, and pour as much of this mixture over the onions as possible (depending on how much the onions have reduced, there may be a tiny spot left over).
